Drain well and mash with fork while adding seasonings. Cover and keep warm while preparing taco shells. Fill shells with brain mixture, onions, tomatoes, and shredded lettuce. <em>Serve immediately<\/em>.<\/p>\n<p>The recipe is from Yolanda Ortiz y Pino&#8217;s <a href=\"http:\/\/www.amazon.com\/Original-Native-New-Mexican-Cooking\/dp\/0865342105\"><em>Original Native New Mexican Cooking<\/em><\/a>. Sure, she specifies &#8220;beef brains,&#8221; but we know better, don&#8217;t we.<\/p>\n<p><strong>Scholars have taken notice<\/strong> of the fact that &#8220;the zombie is ubiquitous in popular culture, as note <a href=\"https:\/\/twitter.com\/docgothic\">Deborah Christie<\/a> and <a href=\"http:\/\/www.clemson.edu\/caah\/english\/faculty-staff\/facultyBio.html?id=1646\">Sarah Juliet Lauro<\/a>, editors of <a href=\"http:\/\/www.amazon.com\/Better-Off-Dead-Evolution-Post-Human\/dp\/0823234479\/ref=sr_1_5?s=books&amp;ie=UTF8&amp;qid=1411857787&amp;sr=1-5&amp;keywords=better+off+dead\"><em>Better Off Dead: The Evolution of the Zombie as Post-Human <\/em><\/a>(2011), which I am just getting around to reading.<\/p>\n<p>One of the contributors, <a href=\"http:\/\/www.mansfield.edu\/english\/faculty.cfm\">Lynn Pifer, (English, Mansfield U.) <\/a>notes that the George Romero-style zombie hordes have completely supplanted the old-style Haitian worker-zombie in popular culture.<\/p>\n<p>Something I doubt that any of the contributors deal with is the <a href=\"http:\/\/natureblog.blogspot.com\/2012\/01\/shot-show-zombies-out-of-control.html\">popularity of the zombie-as-Other in the shooting sports<\/a>.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>What do New Mexico zombies eat?
